Matcha banana bread

There are few things better than pulling a loaf of homemade banana bread from the oven—unless it’s infused with vibrant green matcha and finished with a silky matcha glaze. This recipe combines two comforting favorites into one incredibly soft, buttery loaf that’s just sweet enough while letting the earthy, nutty flavor of matcha shine.
If you’ve ever been hesitant about baking with matcha because you’re worried it’ll taste too grassy or bitter, this recipe is the perfect place to start! The natural sweetness of overripe bananas mellows the matcha beautifully, creating a loaf that’s balanced, cozy, and packed with flavor. Who knew matcha goes sooo well with bananas.
The crumb is unbelievably moist thanks to melted butter and sour cream, while brown sugar adds a subtle caramel richness that pairs wonderfully with the green tea. After baking, the loaf is topped with a smooth matcha glaze that adds just enough sweetness and creates the prettiest bakery-style finish. Every slice is soft, tender, and perfect with a cup of coffee, tea, or an iced matcha latte.
Whether you’re baking for a slow weekend morning, bringing dessert to brunch, or simply trying to use up a few ripe bananas sitting on the counter, this loaf feels just a little more special than classic banana bread while being just as easy to make.
Why You’ll Love This Recipe
Every ingredient in this banana bread works together to create a loaf that’s rich, flavorful, and incredibly tender.
The ripe bananas provide natural sweetness and keep the crumb wonderfully moist without making the loaf heavy. Brown sugar complements the bananas with warm caramel notes, while vanilla bean paste enhances every flavor in the batter.
Unlike many banana breads that rely only on butter, this recipe also includes sour cream, which adds richness and creates a soft texture that stays moist for days.
Of course, the star ingredient is the matcha. Instead of overpowering the loaf, it brings a gentle earthy flavor that perfectly balances the sweetness of the bananas. The matcha glaze on top reinforces those flavors while adding a delicate sweetness and a gorgeous pastel green finish.
The result is a bakery-worthy loaf that’s just as beautiful as it is delicious.
What Does Matcha Taste Like?
If you’re new to baking with matcha, don’t worry—this loaf isn’t overwhelmingly grassy or bitter.
Matcha has a naturally earthy, slightly vegetal flavor with subtle sweetness. In desserts, it provides balance rather than overpowering everything else. Because bananas are naturally sweet and brown sugar adds warm caramel notes, the matcha becomes smooth, mellow, and incredibly comforting.
Using a good-quality culinary or latte-grade matcha will give you the best flavor and the prettiest green color.
Ingredient Notes
Ripe Bananas
The riper your bananas, the better. Look for bananas with plenty of brown spots or nearly black peels. They’re sweeter, mash more easily, and create an incredibly moist loaf.
Matcha Powder
Choose a vibrant green culinary-grade or latte-grade matcha for baking. Fresh matcha provides the brightest color and smoothest flavor.
Brown Sugar
Brown sugar adds moisture while giving the loaf a subtle caramel flavor that pairs perfectly with bananas.
Sour Cream
Don’t skip this ingredient! Sour cream creates an extra tender crumb and helps keep the loaf moist for several days.
Melted Butter
Melted butter gives the banana bread a rich flavor without requiring a mixer, making this recipe wonderfully simple.
Vanilla Bean Paste
Vanilla bean paste adds a deeper vanilla flavor and those beautiful vanilla bean specks throughout the loaf.
Baking Tips for the Best Banana Bread
The secret to incredibly soft banana bread starts with very ripe bananas. If your bananas aren’t ripe enough, the loaf won’t have the same sweetness or moisture.
When measuring flour, spoon it into your measuring cup before leveling it off. Scooping directly into the flour can pack too much into the cup, resulting in a dry loaf.
Mix the batter only until the flour disappears. Overmixing develops gluten, which can make banana bread dense instead of soft and tender.
Finally, allow the loaf to cool completely before glazing. If it’s still warm, the glaze will melt and slide right off instead of setting into a beautiful finish.
Why Add the Butter Last?
One of my favorite techniques in this recipe is stirring the melted butter into the batter at the very end.
By waiting until the wet ingredients and dry ingredients have already been combined, the butter coats the flour less aggressively than it would if mixed in at the beginning. The result is an incredibly soft, delicate crumb with a rich buttery flavor throughout the loaf.
It’s a small step that makes a noticeable difference in the final texture.
Storage Tips
This banana bread stays wonderfully moist for several days.
Store it in an airtight container at room temperature for up to three days or refrigerate for up to one week.
It also freezes beautifully. Wrap individual slices tightly and freeze for up to three months. Simply thaw at room temperature whenever you’re ready for a slice.
